Indianapolis ghost kitchen construction
ClusterTruck at 729 N Pennsylvania Street is the Indianapolis flagship of a delivery-only ghost-kitchen operator that launched in downtown Indy and scaled across the Midwest. Craft Construction Management delivered a back-of-house-first restaurant buildout optimized for multi-concept production, centralized order routing, and delivery driver logistics — all without a traditional dining room.
Ghost kitchens are their own species of hospitality construction. MEP density is higher than a full-service restaurant, kitchen layout has to support parallel concepts, and loading-dock-adjacent access is non-negotiable. We built ClusterTruck to match.
Multi-concept kitchen construction
Running multiple menu concepts out of a single kitchen requires a layout that keeps production lines from colliding and a ticketing system that dispatches orders correctly. The Indianapolis general contracting team sequenced the hood, walk-in, ventilation, and electrical loads to support that operating model from day one.
